If you are doing a keto or low carb diet you probably eat quite a bit of meat. But, buying better cuts of meat can get pretty expensive. I received an Anova Nano Sous Vide cooker last year as a gift. With a sous vide cooker it’s now easier than ever to have a perfectly cooked prime rib dinner without a lot of the hassle you normally have to go through.
Usually you have to have the prime rib cooking in the oven for several hours. Basting is normally recommended and takes time as well as well as having to suffer with high temperatures opening and closing the oven. All of this takes away from enjoying your day. I also used grass-fed beef which I’ve found to have better texture when not cooked as long as the supermarket beef but costco meat is quite a bargain and can feed an army.
The process of cooking a good sous vide prime rib roast is pretty easy. You first season the meat with any seasonings you want to create a nice base flavor. The flavor injection is so delicious. I often use a mix of garlic powder, salt, pepper, and ancho chili powder, as well as some fresh rosemary and thyme.

Cook the prime rib sous vide for between 5 and 10 hours. I now almost exclusively cook mine at 131°F (55°C) for a nice medium-rare. I wouldn’t go above 137°F (58.3° C) unless everyone at the table like it at least medium.
And remember not to go much below 130°F (54.4°C) for more than a few hours as per the sous vide safety guidelines.

HIGH-FAT MEAT CAN IMPROVE KETOSIS RATES
Ketosis is a state where the body burns fat as a source of energy instead of glucose or carbs. The length of time that it takes for an individual to achieve a state of ketosis can vary, but consuming fattier cuts of meat can help to make the transition faster.
The best cuts of meat for a ketogenic diet are those that contain higher levels of fat, since even excess lean protein can interfere with the ability to achieve and maintain ketosis. Luckily, I was able to get the butcher to cut me a more manageable 5 Lb cut of rib. To cook it, I decided to use my homemade Sous Vide setup so I could get the ideal finish level. The sous vide prime rib turned out excellent! It was really tender and medium rare!
Start with a nice cut of prime rib and liberally apply salt and pepper. Note that prime rib is a little confusing in the sense that prime is the grade of the meat and rib refers to the section which it is cut. So in reality you will probably end up getting choice rib but that’s besides the point. I went to my butcher at my local grocery store and asked him for 5 lbs of prime rib to make sous vide prime rib.
Next, seal the prime rib with your vacuum sealer.
To cook the sous vide prime rib, we will submerge it in hot water for 10 hours. I am using my homemade sous vide machine but you can also buy one from amazon. I cooked it at 58 degrees which is on the border of medium and medium rare. If you like it more rare, adjust it down.

The Sous Vide Prime Rib method doesn’t char the outside of the roast at all so after cooking it, briefly broil it in the oven to char the outside.
After the roasting of the Sous Vide Prime Rib, you can see that the roast is a perfect 133 F via my thermapen. By the way, I just got this thermometer and it is by far the best thermometer I’ve ever had. It’s super fast to read and waterproof.
